However, this is a simplified version of this kebab and doesn't use as many spices. Ingredients

    500 gm minced mutton
    2 tablespoon ghee
    4 pieces clove
    water as required

    For Marination

    5 tablespoon papaya paste
    4 tablespoon yoghurt
    3 tablespoon onion paste
    3 tablespoon roasted gram flour (besan)
    1 tablespoon ginger paste
    1/2 teaspoon mace powder
    2 teaspoon powdered yellow pepper
    1 teaspoon powdered black pepper
    1 teaspoon powdered Kashmiri red chilli
    2 teaspoon powdered green cardamom
    1 ml kewra
    salt as required
    8 strand saffron
    1 teaspoon garlic paste

How to make Galouti Kebab

First prepare the kewra water by mixing kewra in a little water. Take a large bowl and add minced meat in it. Add all the ingredients except the marinating ingredients. Mix all the ingredients very well for about five minutes. Once the keema is set for marination, make a well in between the mutton keema.

Next, burn the coal on gas. Take a steel bowl and take out the coal carefully. Place this bowl inside that well and put the cloves on the coal along with a teaspoon of ghee over it. Quickly cover the keema bowl with a lid and let it smoke for five minutes.

Open the lid after 5 minutes and remove the coal bowl carefully. Mix the keema before making kebabs and put a pan on medium flame. Apply a little ghee and pan fry the kebabs from both sides for 2-3 minutes. Once done, serve with green chutney.
